Oats
 
Emergency Essentials sells regular rolled oats and quick rolled oats. Are they used in baking or just breakfast? What type should I buy and how many pails for a year's breakfast for a family of four adults?

I have 5 - 6 gal pails of hard white wheat coming and thinking of buying more.

What about soft white wheat? How much should I buy? I think that stuff is used for cakes.

Hey Sam where did you end up getting your hard wht wheat from? And from what I have heard you can make bread from soft wheat too, but it just isn't quite as good (or so says my sis in law who bakes a lot).

Types of wheat.

The only difference between regular and quick oatmeal is that the seeds are cut in half before rolling. Either can be used for any oatmeal recipe, but the regular takes a little longer to cook.

For baking, a handy trick is to whiz the oats in a blender. This makes a coarse flour that completely changes the texture of whatever you are making.

My favorite cookie recipe is on the back of the Quaker Oats box. Just whiz the oats before mixing, then substitute anything or everything. Using all white sugar instead of brown, you get sugar cookies. Using peanut butter instead of shortening you get peanut butter balls. Add ginger and make gingerbread men. Add maraschino cherries, or sliced almonds, or rum extract, or any other changes you choose. This is an amazingly resilient recipe.

Can you say meatloaf? Use oatmeal instead of bread crumbs. Awesome.

And then, you can substitute oatmeal for some of the flour in a loaf of bread or in oatmeal date nut bread.

I've even seen recipes for oven baked chicken breaded with oatmeal.

If you start looking for ways to use oatmeal in your cooking you'll be amazed at how versatile it is.

My 6 gallon pails of flour say that they contain 454 1/4-cup servings or 113.5 cups of flour. The box of oatmeal in my pantry suggests 1/2 cup of dry oatmeal per serving or 730 cups required for 4 people for 365 days. That's one heck of a lot of oatmeal (nearly 6.5 pails) but if you honestly believe that at some point in time you'll actually be going through 2 cups a day, it would go pretty fast. I think I'd re-think that assumption if I were you. Wheat berries have a longer shelf life than rolled oats. Have you ever tried cooked cracked wheat for breakfast? Not bad with brown sugar and milk. Yummmm.

Or maybe you could buy whole oat groats and roll them yourself as needed. Longer shelf life that way.

http://www.kurtsaxon.com/foods000.htm has a neat idea for wheat: sprout it, then cook overnight in a thermos. Breakfast for less than a nickel a day!

Steal cut oaks (instead of rolled) are less processed and healthier and more nutricious according to some
